MOCKTAIL RECIPE:
PENTIRE PALOMA

Embrace a January health kick with our Paloma Mocktail!

We use Pentire Seaward (a non-alcoholic coastal botanical spirit with saline and herbal notes) but you can use a different alcohol free spirit of your choice.

Ingredients (serves 1)

50ml Pentire Seaward

25ml fresh grapefruit juice (pink is best)

10ml fresh lime juice

5ml agave syrup (light agave syrup recommended - you can adjust to taste)

Chilled soda water

Ice

Garnish: slice of grapefruit

Recipe

Chill a highball glass - fill the glass completely with ice and set it aside while you make the drink.

Fill a cocktail shaker 3/4 full of ice, then add the Pentire Seaward (or other 0% spirit), grapefruit juice, lime juice and agave syrup. Shake firmly for 10–12 seconds (you are aiming to chill the mixture, lightly dilute and fully integrate the agave with the citrus). The shaker should feel very cold in your hands.

Discard the ice and water from your chilled glass. Refill 1/3 full with fresh ice. Fine strain the shaken mixture (to remove any citrus pulp) into the glass. Top with soda. Using a long spoon, give one gentle stir from the bottom (to combine without flattening the soda).

To Garnish:

Garnish with a slice of grapefruit. For extra aroma, lightly squeeze the peel over the drink before adding it. Sit back and enjoy!

Maddie's Tip:

Measure carefully, this drink relies on balance between citrus, sweetness, and salinity.
